Just scarf, you will need 3 skeins. Just the hat, you will need 2 skeins.

Needles:
Scarf – US 8 [5.00mm]
Hat – US 6 [4.00 mm] circular needle, 16"; US 8 [5.00 mm] circular needle, 16" and a set of dpn.

Notions:
Blocking pins
Stitch holders or waste yarn
Tapestry needle
Stitch markers

Gauge:
Scarf: 17 Sts and 22 Rows = 4" in Knotted Rib patt, blocked.
Hat: 22 Sts and 21 Rows = 4" in Knotted Rib pattern
(in the round) with larger needles, blocked.

Notes:
The infinity scarf starts with a provisional cast on and is knit lengthwise in one piece. After knitting, the live sts are placed on scrap yarn and the whole scarf is blocked. When scarf is dry, provisional cast on sts and live sts are placed back on needles and the two ends are joined together using the kitchener st.

The Winchester scarf and hat combines 2 different stitch patterns that really highlight the textural quality of WATERshed. It looks like vertical and horizontal ridges or lines are running through the scarf and hat. The scarf starts off with a provisional cast on, knit lengthwise and then grafted together using the kitchener stitch.
